I have a new favorite lunch dish!! This is seriously one of the yummiest things I have ever tasted, (which probably has something to do with the large amount of cilantro in it!) Earlier this week a few friends came over for a potluck lunch and Beth brought this dish and I just had to get the recipe. (Beth is the mommy of THIS precious baby girl!) I don't even know the name of this dish, so I will just call it Beth Salad!!
It's pretty simple, just a lot of chopping. No real measurements, just throwing everything in there together, which is my way of cooking. So chop up into small pieces:
tomato
avocado
orange or red pepper
red onion
Then add in some frozen corn - I used one of the "singles", which is probably about a cup. No need to cook the corn, it will thaw quickly while you make the salad. Next pick all the leaves off the cilantro stalks, the more the better!!! Add in about a half can of black beans, rinsed and drained. Add about a 1/2 cup of cooked rice (I used jasmine rice - I shall be scolded by Enchanted Warrior for not using brown rice, sorry, I love me jasmine rice). Squeeze the juice from one lime, add about 3 tbsp of olive oil and some salt and pepper.
So that was:
corn
cilantro
black beans
rice
lime juice
olive oil
salt and pepper
WA-LA!!!
The only thing that makes this tastier is a glass (or Solo cup) of sweet tea, and sitting on the deck under the umbrella with my favorite girls for lunch on a gorgeous day!
I get inspired this time of year with all the yummy fresh fruits and vegetables available.
A nice healthy lunch for Boo (minus the sugar covered raspberries that she inhaled before I came back with my camera!)
The ever popular "ants on a log" (which is peanut butter on celery with raisins performing as the ants!). Banana couldn't get enough of these today.
Mmmmm....sweet tea in colorful summer time cups!!

This looks good. I would leave out the avocado and of course the sweet tea. Does this turn out cold, or warm with the rice in it? May have to try it.

Jasmine comes in a lovely shade of brown, I just had it for dinner, you've got to give it a l'il taste!!!! I love all the colorful fruits & veges!! You r a good mama!
Nana - I cooked the rice and by the time I had everything chopped up, the rice was pretty much room temperature. But then I refrigerated the leftovers and had that for dinner cold, and it was just as yummy!!

Oooh! I can't believe I made the blog!:) I'm glad you enjoyed it! We had it for dinner last night without the rice as a side/topping for soft tacos. Thanks again for hosting us, crazy boys and all! :)
